Overnight Chocolate PB Protein Oats

Let me just say that if you have a sweet tooth like me and enjoyed my banana and peanut butter french toast recipe, you are going to fall in love with this one.

It’s everything a chocolate/peanut butter/banana lover could want and more.

I’m not lying. You’ll die.

Since this is an overnight recipe, most of the preparation goes into affect before you go to sleep, making for a quick fix in the a.m. This recipe is perfect if you are living in a situation without an oven or stove (like me in my dorm last year) but still want something delicious and nutritious that isn’t a Jimmy Dean frozen breakfast sandwich or whatever gets schlepped up in the dining hall day after day.

For protein, I love choosing a chocolate flavored powder because it is my absolute favorite and brand-wise, Chocolate Vegan Shakeology is always my go to. If I have it available.

The recipe calls for 1 cup of whole grain rolled oats and 1 cup of almond milk which makes for a pretty large batch. If you’re appetite is smaller, you can modify the recipe to a 1/2 cup whole grain rolled oats and 1/2 cup almond milk. The banana and protein amounts should remain the same (and if you have a big appetite like me, but make the smaller version, it totally doubles as a great snack)!


  • 1 cup whole grain rolled oats
  • 1 cup unsweetened almond milk
  • 1 banana, divided
  • 1/4 teaspoon vanilla extract
  • Chocolate protein powder of choice (Chocolate Vegan Shakeology will always be my fave)
  • 1 tbsp all-natural crunchy peanut butter


  1. Pour oats, almond milk, and vanilla extract into a bowl, tupperware container, or mason jar.
  2. Mash 1/2 the banana and mix in with other ingredients. Cover container and let it sit overnight in fridge for at least 5 hours. Chop up other 1/2 of banana and place in sealed container in fridge as well so they don’t brown.
  3. In the morning, remove lid from oats mixture and pour in one scoop of your favorite chocolate protein powder. Mix thoroughly.
  4. Scoop into bowl, place sliced bananas on top. Take 1 tbsp of all-natural crunchy peanut butter and melt in microwave (approx. 45 seconds). Drizzle on top.
